Introduction to ICCAS
The International Conference on Culinary Arts and Sciences (ICCAS) was founded in 1993 by the Worshipful Company of Cooks of London as a forum for culinary artists and scientists from academia and industry to present their work and share ideas. ICCAS is the only international conference that brings together the two sides of the international food industry, food science and food service.
Twelve ICCAS conferences have been held around the world in various countries starting in UK 1996 and recently in 2022 in Lyon, France. The 13th ICCAS conference will be held in the southern part of Sweden, in Kristianstad. This area of Sweden is well known for its beautiful landscape with many lakes and water rich areas protected by UNESCO. Further, for the farming landscape and the food production. Kristianstad University with education and research within food and meal science, will host the conference.
The conference will uniquely bring together local, national and international researchers and other professionals in the food system, for example representatives from the food retail and industry, with an interest in culinary art, food science and consumers.
